Delightful Summer Menu Additions

The changing of seasons is exciting for many reasons, but here at the Inn it means new menu items!  Chef Gregory Romo and the Doc Martin's kitchen have added some beautiful new summer dishes that are sure to delight. Chef Romo has been with Doc Martin's for over 10 years. A Taos native, he has made it his goal to source as much of the menu locally as possible and these new additions were created with just that in mind! 

   

1. Will you tell us a little about this menu moving into summer?

I felt that at this time we needed a change to boost the summer atmosphere and apply a little more creativity in the dishes.

2. What were your inspirations with these new dishes?

We have a lot of great cooks here, it was a matter of compiling the best of our specials throughout the year, and showcasing them in a new light on the summer menu.

3. Tell us a little about where these exciting new dishes are sourced,  what new menu item are you most proud of?

We are fortunate enough to have many menu items locally sourced right here in Taos, from our chicken to our lamb. The majority of our greens and herbs are sourced from our garden right here on the beautiful Historic Taos Inn grounds. I would say that I am equally proud of all the new menu’s items!

4. How long did the development process of this menu take?

It was month-long process of trial and error to find what would best fit for the summer menu.

5. How many contributors were there?

All of my best sous-chefs and cooks: Cedar, Homero, Antonio, and Steve all played a large role in creative contributions.

6. If there were a theme of this new menu, what would it be?

Fresh, local textures.

7. When you eat at Doc’s what is your go-to meal?

I love to eat our daily specials, always very creative and tasty!

8. How do you feel Taos and New Mexico overall is represented in these new menu items?

The majority of our foods are locally sourced and produced, this well represents our local Taos produce and meats. Our dishes are steeped in traditional, as well as contemporary Spanish, New Mexican culinary style.

9. We are proud to be known as the “living room of Taos,” and boast live music nightly. What musical artist would you be most excited to cook for?

Probably Johnny Cash! If he were still alive!

10. What would you make him?

I would cook Johnny the new rib-eye dish!
